Pumpkin Chocolate Mugcake

It’s all fun and games until someone goes insane. Ten days to go and things this prep were going so well until today proved me wrong. With my poor brain quickly losing thought power, I was fully expecting to back through my garage door one morning after forgetting to push the opener. I’ve manged (knock on wood) to avoid doing that so far, but today may actually have been more embarrassing.

Every year this time, my work has a huge all hands meeting downtown that everyone looks forward to. It’s a celebration with lots of music, fun videos, and info about what’s planned for the coming year. I was all set to go this morning with my food packed to eat during the meeting. Unfortunately it was raining which completely derailed traffic and I was stuck for much longer than I had planned.

Since I’d waited until arrival to eat breakfast, by the time I got there I was starving. I walked in the convention center and was greeted by the concierge who said breakfast is that way and the meeting is this way. <Insert hand gestures> After confirming that breakfast also included coffee, I burst through the first doors hellbent on caffeinating myself. I was promptly smacked in the face with the delightful aroma of biscuits and pancakes!!!!

I tried to not inhale but you know how that goes. I ran past all the warmers of goodies and found the coffee. Some poor schmuck made the bad decision to block the coffee and take a phone call. Urgh, not much irks me more than badly placed phone talking. I pretty much hip checked the guy out of the way with a shove and proceeded to fill my cup. Ooooh look, coffee lids, shiny things, squirrel, oh boy blackberries!!!  All kinds of fruit right here by the coffee table with blackberries, my favorite!

So I grabbed a lid with one hand and a couple blackberries with my other and popped them in my mouth. Gah, they were good. I stood for a moment to enjoy. And then… phone man looked horrified and gingerly reached in front of me… to pick up his breakfast that I was so kindly stealing berries from!!!! OMG OMG OMG. I have now resorted to mugging strangers for food.

I’m sorry your honor. I was high on the smell of biscuits! Apparently not only can I not be trusted alone with your food at this point, I need a handler to keep me from wrestling you for it. Sigh. Welcome to my world. It’s a mad mad mad place in here. 😉

Pumpkin Chocolate Mug Cake Pumpkin Chocolate Mugcake

  • 2 Tbsp (15g) all purpose flour
  • 1/2 scoop (21g) chocolate protein powder
  • 1 Tbsp (5g) unsweetened cocoa
  • 2 egg whites
  • 1/4 cup unsweetened almond milk
  • 1/4 tsp baking powder
  • 1/4 cup (50g) canned pumpkin
  • Sugar Free chocolate and caramel syrups

Mix the first 6 ingredients in a microwavable mug until well blended. Microwave for approximately 1 minute until dry on top. The cake will rise up above the top of the mug while cooking. Try not to panic but watch it to make sure it doesn’t ooze over. Mine just rose straight up and didn’t overflow.

Remove from the microwave and flip the mug over onto a plate to remove the cake. Top with the canned pumpkin and syrups, if desired.

Makes 1 mugcake at 201 calories – 24g protein, 26g carbs, and 3g fat.

I did manage a horrified apology for my behavior, but I’m pretty sure he thinks I’m a lunatic. I’m going to be keeping my fingers crossed that I never run into this guy in the hallway at work. Just hand over the berries and no one gets hurt! So have you ever had an insane moment like this one?

    Finally!! A mugcake that stayed moist and yummy! Skipped the pumpkin but added peanut butter on top!

    • Yay! In my experimenting lately, I’ve found that whey usually ends up dry. I’m having much better luck using protein blends with whey, casein, and so on mixed in one. I had a whey mugcake the other day that was like eating a kitchen sponge. I’ve not had that with blends.
