Chocolate Lava Mugcake

Have you ever had one of those gooey chocolate lava cakes? It’s the one with the chocolate cake part on the top but underneath there’s this fudge sauce. Like a chocolate volcano with chocolate lava. I think Chili’s has a version and I’ve seen them other places too. Yeah, they’re so good yet so bad.

Since I love mugcakes, I wanted to see if I could make some kind of chocolate lava mugcake and shave a few hundred calories off in the process.  I think I managed to do pretty well. It took a little playing around to get the cooking time right and the results below are from my ancient microwave. You may need to test it out in yours if you have a fancy high powered microwave that cooks faster.

Pay attention when reading through the instructions. You only mix the cake ingredients and then everything else goes on top without mixing. As it cooks, the topping and water on top mix somehow and slide under the cake to lava-fy themselves. If you mix everything together, you won’t get that and you’ll miss out on the best part.

Cake Ingredients:

  • 3 Tbsp (22g) all purpose flour
  • 1 Tbsp (15g) nonfat Greek yogurt
  • 1/2 Tbsp (3g) unsweetened cocoa powder
  • 1 tsp (5g) granulated sugar
  • 1/2 tsp baking powder
  • 2 Tbsp unsweetened almond milk
  • 1 Tbsp water

Topping Ingredients:

  • 1/2 Tbsp (3g) unsweetened cocoa powder
  • 1 tsp (5g) granulated sugar
  • 2 Tbsp water

Mugcake Close UpIn a microwaveable mug or container, mix the cake ingredients until blended. In a small container, mix the cocoa powder and sugar for the topping. Do NOT add the water yet!

Sprinkle the cocoa and sugar over the cake batter but don’t mix. Just sprinkle. Pour the 2 Tbsp of water gently over the top of the cake again, don’t mix. Microwave for 2 – 2 1/2 minutes at 70% power. Remove and enjoy!

Makes one lava cake at approximately 145 calories – 5g protein, 29g carbs, and 1g fat.

I like my cakes with just a little bit of sweetness so this isn’t overly sweet and you can top it like I did in the picture above with protein ice cream. You can also add a couple more teaspoons of sugar. I really enjoyed the darker chocolate flavor as is.

You could also make this a chocolate java lava cake by using brewed coffee instead of water. On with my mugcake love! (Let’s not even get started on my donut love.) I need to try a red velvet mugcake sometime.
