Workouts of the Week: Week 11, A Milestone, and A Recipe

skinny-jeansI’ve wrapped up another week of workouts using 80% of my one rep max this time around. I struggled a bit towards the end of the week in my bench press workout. I managed the bench press just fine but when I tried to tackle the incline presses afterwards, I ended up doing the walk of shame back to the weight rack. Not just once, but twice.

Hey, it happens right? I tried my best and there’s always another week. 😉 That being said, I have this pair of jeans that I bought right before I did my last contest. These are my skinny jeans. I think every woman has a pair of skinny jeans hidden in her closet. Mine have sat idle for quite some time now.

Every now and then I get them out and attempt to squeeze myself into them. I jump around, lay down, suck it in. Yeah, ain’t a happen’. I actually have denied the fact that they existed for about a year now. Yesterday I happened to see them buried as I reached for another pair. I decided to give a go and see how close I was to squeezing in.

Lo and behold, they went on, buttoned and zipped without trouble. They FIT!!! These are the jeans that fit about a week before contest when I was at my leanest ever, and currently I am just about 5 months out from the next contest. This is a monumental accomplishment and shows how well the workouts are actually making a difference.

So, yes. I’m perfectly fine with occasionally doing the walk of shame and picking a lighter weight since I’m giving it my all. And now for another recipe for you guys. This one was really good. The spicy sweetness of the sauce on the chicken is a healthier version of your typical barbecue sauce. The chile just adds a bit of a kick, but not “reach for your water” level hot.

Blueberry Chipotle Grilled Chicken  blueberry chipotle grilled chicken

  • 2 Tbsp sugar free blueberry jam (I used Polaner Simply Fruit)
  • 1 1/2 Tbsp lime juice
  • 1 Tbsp chile in adobo sauce, minced
  • 1 tsp minced garlic
  • 1 lb boneless skinless chicken breasts
  • salt and pepper, to taste
  • 1 1/2 cups sliced carrots
  • 1 1/2 cups sliced cucumber
  • 1/2 sliced red onion
  • 1 Tbsp red wine vinegar
  • 1/2 tsp sugar

Combine the blueberry jam, lime juice, minced chile and garlic in a small bowl and whisk until smooth. Microwave for about a minute. This will heat it just enough to make it kinda syrupy and saucy. Set it aside for just a bit.

Preheat your grill or heat a grill pan to medium if you’re cooking indoors. Sprinkle the chicken breasts with salt and pepper to season them. Grill the chicken for about 6 minutes on each side until cooked all the way through. Remove from heat and let them rest for about 5 minutes.

Combine the carrots, cucumber, and onion in a bowl with the vinegar and sugar. Toss lightly to coat. Drizzle the chicken with the blueberry sauce and serve with the side of carrot cucumber salad. Makes 4 servings at approximately 245 calories each.

You could easily make the sauce with a different flavor like blackberry or raspberry. I just happened to have blueberry jam on hand since I like that.
