It’s time again for another great post as part of Fitness Blog World. This one is particularly exciting for me since we were asked to post our favorite healthy recipe that uses five ingredients or less. So with me being full of recipes that are fast and easy, the hard part was actually narrowing it down to my favorite. I love them all or I wouldn’t bother with them. 😉
Here are a few of my faves that have gotten some rave reviews from friends and on Twitter:
- Mexican Enchilada Lasagna
- Blackened Chile Dusted Chicken
- Sweet and Crunchy Chicken Salad
- Apple Curry Turkey Meatloaf
In honor of the post request though, I whipped up a new recipe that turned out really well and got the approval of both me and The Kid. I made this for dinner last night with a side of asparagus that I picked up as an impulse purchase at Sam’s Club. Funny how my impulse purchases are now veggies.
Spicy Apple Turkey Tenderloins
- 1 pkg Jenny O turkey breast tenderloins (1.25 lbs)
- 1 cup unsweetened applesauce
- 2 Tbsp low sodium soy sauce
- 1 Tbsp brown sugar (optional)
- 1 – 2 pinches crushed red pepper
Preheat oven to 350 degrees. Place the tenderloins in a baking dish. Mix the applesauce, soy sauce, brown sugar, and red pepper in a small bowl. You can use more or less red pepper depending on how mild or spicy you like things. Pour the sauce over top of the turkey and bake at 350 degrees for about 40 minutes. Makes 4 servings.
I hope you enjoy the recipes. Happy Monday! Today is weigh and measure day with Trainer Man. Wish me luck!
