High Protein Lemon Poppy Seed Waffles

Lemon poppy seed muffins are really popular. I love their sunny coloring and the lemon flavor. I’ve even seen lemon poppy seed loaves with glaze over top. That’s some good stuff. I was playing around this weekend in the kitchen, and my mom had given me poppy seeds. I can’t say that I’ve ever used poppy seeds in cooking before, but I figured I’d give lemon poppy seed something a try.

It was pure coincidence that it was breakfast time and I was making waffles, so lemon poppy seed waffles it was. Sometimes I make protein waffles by adding protein powder, but this time I wanted to used tofu. Protein powder can be tricky and you often end up with a different texture. Using tofu is more predictable and doesn’t affect the waffle texture as much.

  • 12 oz extra firm tofu
  • 1 1/2 cups unsweetened almond milk
  • 2 tsp vanilla
  • 2-3 Tbsp lemon juice (see note)
  • 2 cups (240g) whole wheat flour
  • 2 Tbsp (24g) sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp poppy seeds

Preheat your waffle iron. Mix the tofu and the liquid ingredients in a blender or Magic Bullet until smooth. Measure the dry ingredients in a large bowl. Add the tofu mixture to the dry ingredients and mix well to combine. Bake in your waffle iron according to directions.

Makes approximately 17 waffles (depending on the size of your iron) at approximately 82 calories each – 5g protein, 11g carbs, and 2g fat.

Notes

  • Everyone’s taste for lemon flavor is different. I suggest starting with 2 Tbsp of lemon juice and tasting the batter to see if it’s lemony enough. If not, you can add another tablespoon. Better to start less lemony and add more, than too much.

This made a ton of waffles! I got 17 of them out of the batter so I had plenty to freeze for breakfast during the week. You can always make a half batch if you don’t want that many waffles. They were perfect with blueberry syrup and I also had them later with cream cheese.
